One Monte-Carlo is a luxury retail, dining, and residential complex developed by Monte-Carlo Société des Bains de Mer (SBM), opened in 2019. It occupies the former Sporting d'Hiver site on Place du Casino, directly between the Casino de Monte-Carlo and the Hôtel de Paris.

Dining
Pavyllon Monte-Carlo by three-Michelin-starred chef Yannick Alléno is the flagship restaurant, serving contemporary French cuisine at the Hôtel Hermitage end of the complex. COYA Monte-Carlo offers Peruvian-inspired cuisine and cocktails in a vibrant setting. Several casual dining and café options are also available within the complex.
